Fiddleheads are the tops of ferns before they spread their leaves out like a big grown up fern. And they are delicious.

You know, leave only footprints and take only, um, nothing, so we bought our ferns from the Fair Food Farmstand, in the Spring.

We blanched! and then sautéd in olive oil, garlic, s&p, shallots and tomatoes. Served with chicken and a giant sweet potato from the grill. Twas a good meal.
