I made food. and it was goooooooooood.
Chopped up/diced? small one-quarter of an onion. a yellow onion.
Chopped up 3 scallions whites to greens
3 cloves of garlic. keep chopping…
put in a skillet w/ about a 1/4 cup of chicken stock and a 1/2 teaspoon of chili oil. (no, i didn’t measure – but it was a tiny little plop of oil).
add: s&p and a sprinkle of red pepper flakes and oregano
ok. simmmer simmmmmmmer real good.
then in a different pan chop up the pancetta into tiny little bittles. it is really fatty and greasy and may start to smoke and make you not breathe so good. but keep cooking it until it gets all brown and crispy. set aside.
in that other simmering pan, when the onions are all soft, add in some chopped up tomatoes and simmer some more. if you have lost too much liquid add in more chicken stock.
ok. then keep simmmmmmering to make the tomatoes soft.
then add in shrimps! and add in a few stalks of finely chopped celery.
cook until the shrimps are not clear but are pink.
toss with pancetta and elbow macaronis! and then add in fresh basil from your garden. go get fresh basil and put it in your garden!
i think spaghetti or angel hair would be better for this. but the elbows were on sale or something…
