Quail Update!

On a whim, we got a four pack of quails from Greensgrow Farm last week.  Yes…a four pack.  This should have immediately let us know that there wouldn’t be much meat on these cute little birds…
Having never grilled quail before, we consulted the internet for recipes.  Most called for hours of marinading  in fancy sauces.  We didn’t have time or patience for that, so we went with good old fashioned olive oil, salt, pepper and heaps of paprika.
But before we rubbed them up, we had to clean them…it was recommended that the quails be spatchcocked for even grilling.  so we cut into the backbone with our heavy duty kitchen shears, to find…guts.  yep…lots of  the good stuff was still in there.  if anyone asks, a quails heart is about the size and shape of a small olive.  no pictures, as i wanted to avoid getting guts on my phone…
the quails cooked up fast on the grill.  about 12 minutes total.  they are a greasy little bird though, so be ready for flare ups.
the quail tasted like dark chicken meat. greasy and delicious. but not very meaty.  i’d imagine that very rich people don’t go out to wing night. they go out to quail night. i could have probably eaten a half dozen of these tiny fowl myself.
we accompanied the quail with a side of hickory salted, grilled potatoes and curried eggplant.
a good meal…but for the price, amount of work and amount of meat, we’d probably stick to game hens…
